Easy Italian Sausage and Peppers Sandwich - Carloochi's Way

A great Italian sausage and peppers sandwich is one of those Italian-American classics that turns a Saturday afternoon into a feast. Juicy sausage, four colors of sweet pepper sautéed soft with sweet onion and golden garlic, all piled into a soft potato roll with a swipe of spicy mustard and a generous pour of Carlos' Consuming Fire Hot Sauce on top. It's the kind of sandwich that doesn't survive the napkin, and you wouldn't have it any other way. This is my family recipe. We call it Carloochi's. Twenty-five minutes from cold pan to first bite.

- 1Start the sausage: Preheat a large skillet over medium heat. Pour in 1/4 cup of water and let it come up to a gentle simmer. Add the sausage links, cover, and cook for 12-15 minutes, turning occasionally, until the water has cooked off and the sausages are deeply browned on all sides. They should reach a safe internal temperature of 160°F (71°C).
- 2Prep the peppers and onions: While the sausage cooks, mince the garlic, then slice all four peppers and both onions into thin strips. Working ahead here keeps the pans hot and your timing clean.
- 3Sauté the peppers and onions: Heat 2 tbsp avocado oil in a second skillet over medium-high heat. Add the garlic and stir until golden and fragrant, about 30 seconds. Toss in the peppers and onions, season with a pinch of salt and pepper, and stir frequently for 3-4 minutes until softened but still with a little snap. Pull off the heat.
- 4Build the sandwich: Split the potato rolls and spread a little spicy mustard on the inside. Lay a sausage link in each roll, then pile on a generous heap of the peppers, onions, and garlic. Finish with Carlos' Consuming Fire Hot Sauce to taste.
